‘Clancey Lavender’s dream of making maple syrup and having a sugar house came true in 2011 with hard work and determination!’ Following on an earlier tradition from the 1930s, the Lavender family collected sap in pails, emptied it into tanks on a wagon hauled by horses and transferred the sap to a cauldron over the fire outside in the bush. He fondly remembers helping his father and grandfather make maple syrup.
